sweet onion potatoes au gratin

Ingredients

  • 2 tablespoons butter
  • 1 large or 2 medium sweet onions, such as Vidalia, thinly sliced
  • Salt and freshly ground black pepper
  • 1/2 teaspoon ground thyme
  • 1 bay leaf, fresh or dried
  • 2 pounds baby Yukon gold potatoes or fingerling potatoes
  • 1/2-2/3 cup heavy cream
  • 1/2 cup grated Parmigiano Reggiano cheese
  • 1/2 pound brick Gruyère or Swiss cheese, shredded
Serves 4

Preparation

Heat a small skillet with the butter over medium heat. Add the onions and season with salt, the ground thyme and bay leaf and cook until very soft and sweet and lightly caramelized, 20 minutes. Season with salt and pepper, to taste, and discard the bay leaf.

While the onions cook, put the potatoes in a medium size pot and cover with water. Bring to a boil, then salt the water and cook until tender, 12-15 minutes. Drain and return the potatoes to the hot pot. Mash the potatoes with the cream and Parmigiano Reggiano and season with salt and pepper, to taste.

Pre-heat the broiler.

Arrange the mashed potatoes in individual gratin dishes or one shallow casserole dish. Top the potatoes with the onions and Gruyère cheese. Place the dish(es) on a sheet pan and brown under a hot broiler until bubbly, about 2 minutes. Remove from the oven and serve hot.

1-2 carrots julienned/thinly sliced (optional)

2T vegetable oil or Peanut oil for stir frying above veggies
1/4 cup cornstarch
1 3/4 cups water
3/4 cup white sugar
1/2 cup distilled white vinegar
2 drops orange food color
8 skinless, boneless chicken breast halves - cut into 1 inch cubes

2 tablespoons vegetable oil
2 tablespoons cornstarch
1/2 teaspoon salt
1/4 teaspoon ground white pepper
1 egg
2 cups water

In a separate bowl, combine 1/4 cup cornstarch and 1/4 cup water; slowly stir into saucepan. Continue stirring until mixture thickens. Set aside keeping warm.

3-Combine flour, 2 tablespoons oil, 2 tablespoons cornstarch, salt, white pepper, and egg. Add 1 1/2 cups water gradually to make a thick batter. Stir to blend thoroughly. Add chicken pieces, and stir until chicken is well coated.

4-Heat oil in skillet or wok to 360 degrees F (180 degrees C). Fry chicken pieces in hot oil until golden. Remove chicken, and drain on paper towels.

5-When ready to serve, layer veggies, pineapple chunks, and cooked chicken pieces on a platter. Pour hot sweet and sour sauce over top. Serve with rice if desired.

Italian Night Chicken Tetrazzini

Chicken Tetrazzini

Ingredients
9 tablespoons butter (I used half real butter, and half I can't beleive it's not butter for lower fat)
2 tablespoons olive oil
4 boneless skinless chicken breasts
2 1/4 teaspoons salt
1 1/4 teaspoons freshly ground black pepper
1 pound white mushrooms, sliced
1 large onion, finely chopped
5 cloves garlic, minced
1 tablespoon chopped fresh thyme leaves
1/2 cup chicken stock or broth (stock is richer in flavor)
1/3 cup all-purpose flour
4 cups whole milk, room temperature (Used 2% for lower fat)
1 cup heavy whipping cream, room temperature (used no substitutes, needs it for rich flavor)
1 cup chicken broth
1/8 teaspoon ground nutmeg
12 ounces linguine
3/4 cup frozen peas
1/4 cup chopped fresh Italian parsley leaves
1 cup grated Parmesan
1/4 cup dried Italian-style breadcrumbs

Directions
Preheat the oven to 450 degrees F.
Spread 1 tablespoon of butter over a 13 by 9 by 2-inch baking dish. Melt 1 tablespoon each of butter and oil in a deep large nonstick frying pan over medium-high heat. Sprinkle the chicken with 1/2 teaspoon each of salt and pepper. Add the chicken to the hot pan and cook until pale golden and just cooked through, about 4 minutes per side. Transfer the chicken to a plate to cool slightly. Coarsely shred the chicken into bite-size pieces and into a large bowl.
Meanwhile, add 1 tablespoon each of butter and oil to the same pan. Add the mushrooms and saute over medium-high heat until the liquid from the mushrooms evaporates and the mushrooms become pale golden, about 12 minutes. Add the onion, garlic, and thyme, and saute until the onion is translucent, about 8 minutes. Add 1/2 c of stock/broth and simmer until it evaporates, about 2 minutes. Transfer the mushroom mixture to the bowl with the chicken.
Melt 3 more tablespoons butter in the same pan over medium-low heat. Add the flour and whisk for 2 minutes. Whisk in the milk, cream, 1 c. broth, nutmeg, remaining 1 3/4 teaspoons salt, and remaining 3/4 teaspoon pepper. Increase the heat to high. Cover and bring to a boil. Simmer, uncovered, until the sauce thickens slightly, whisking often, about 10 minutes.
Bring a large pot of salted water to a boil. Add the linguine and cook until it is tender but still firm to the bite, stirring occasionally, about 9 minutes. Drain. Add the linguine, sauce, peas, and parsley to the chicken mixture. Toss until the sauce coats the pasta and the mixture is well blended.
Transfer the pasta mixture to the prepared baking dish. Stir the cheese and breadcrumbs in a small bowl to blend. Sprinkle the cheese mixture over the pasta. Dot with the remaining 3 tablespoons of butter. Bake, uncovered, until golden brown on top and the sauce bubbles, about 25 minutes. BON APPETTIT!

The Lady and Son's Smoked Boston Butt Roast Recipe (Brooke’s Version)

Here is my take on this delicious dish.

1 (5-pound) pork butt roast
4 tablespoons House Seasoning, recipe follows
4 tablespoons liquid smoke
Barbeque sauce of choice, for serving

Sprinkle 1 side of the roast with 2 tablespoons of the House Seasoning, making sure to rub well. Flip the roast over and rub the remaining 2 tablespoons of House Seasoning. Repeat the process with liquid smoke. Place the roast in a crock pot on low before you go to bed the night before. I placed it in the crock pot at midnight. Turn the roast over in the morning and pull it out when you’re ready to have dinner.

House Seasoning:
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder
Mix ingredients together and store in an airtight container for up to 6 months. Because I cook my roast in the crock pot for so long it will not slice as shown in the picture.
